Fried Green Tomato Supreme (southern style BLT)

Ingredients

2 medium green tomatoes
½ cup all-purpose flour
¼ cup milk
2 beaten eggs
2/3 cup panko bread crumbs or cornmeal 
 ¼ cup olive oil 
Salt and pepper
Lettuce 
Challah bread
Ripe avocados
3 strips of bacon
2 pieces sharp cheddar cheese
Dollop of remoulade sauce or mayonnaise

Fulfill your sandwich fix with Chicago hot-spot The Big Easy's fried green tomato supreme.  Showcasing one of the south’s most notable and delicious staples, the supreme combines crispy, fried green tomatoes, guacamole, melted cheddar cheese.

Method
Cut unpeeled tomatoes into 1/2inch slices. Sprinkle slices with salt and pepper. Place flour, milk, eggs and bread crumbs each into separate shallow dishes. Heat 2 tbsp of olive oil in a skillet on medium heat. Dip tomato slices in milk, then flour, then eggs and finally bread crumbs. In the skillet, fry half of the coated tomato slices at a time for 4 to 6 minutes or until brown. Season to taste with salt and pepper.

Fry bacon in a medium skillet until crispy, set aside. Peel avocado and cut into long strips (or mash depending on textural preference). Slice Challah bread and toast. Build sandwich by layering lettuce, fried green tomatoes, cheddar cheese, bacon, and avocados. Enjoy!
