Chef Watkins has been developing this style at Sierra since the doors opened in 1992. " New American Cuisine is a combination of New World Ingredients and European cooking techniques." Watkins says that New American cuisine possesses five main components of taste- sweet, sour, salt, bitter and heat- for truly well rounded, robust complex flavors.

Watkins cuisine continually develops thanks to his diverse guest chef trips to Asia and Europe.
