Rick Bayless on Paul Kahan.....
I worked with Paul Kahan for several years and was always
inpressed with his vision - even more than his cooking
skill, which was always excellent. He was clearly transported
to another realm when he talked about food or cooked and
ate it, thrilled with where the flavor, texture and visuals
had taken him. He was like the young artist who, upon
experiencing beauty and mastery, used inspiration to call
up something from inside himself. Paul was never a copier...
